Ingredients for 4 servings:
- 400 g sausage, whole (beer ham or meat sausage, city sausage)
- 4 m.-large gherkins, from the jar
- 200 g cheese (Edam, Emmental, Gouda)
- 1 bunch of spring onions or 1 other onion
- 1 bunch of radishes
- 250 g cherry tomatoes
- 3 eggs, hard boiled
- White wine vinegar or balsamic vinegar bianco
- oil
- Cucumber juice
- salt and pepper
- Herbs, fresh as desired

Finely chop the sausage and cheese. Slice the spring onions into small rings and the radishes into thin slices. Grate the cucumbers very thinly or cut into small pieces. Chop the eggs. Mix all ingredients in a bowl. For the dressing, add a good splash of the cucumber juice, vinegar to taste (do not use dark balsamic!), about 2-3 tablespoons of oil (walnut oil is very good), and salt and pepper. Stir the dressing into the other ingredients. Let it sit for at least 2 hours (without tomatoes). Finally, chop the tomatoes into small pieces. Do not stir them in until just before serving, otherwise they will become too soft. Season to taste and, if you like, add fresh herbs. Serve with fresh farmhouse bread and a beer.
