Ingredients for 4 servings:
- 1 kg peas, frozen
- 1 ½ liters vegetable broth
- 1 clove(s) garlic
- 1 dashes lemon juice
- 1 pinch(s) of sugar
- Salt and pepper, white
- 4 tbsp crème fraîche
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Bring the peas to a boil in a saucepan with the vegetable stock and the garlic clove. Season with lemon, sugar, salt, and pepper. Purée with a hand blender and stir in a little crème fraîche. Variations: a) Cook a few sprigs of fresh mint with the mixture and garnish with chopped mint leaves. b) Possible soup garnishes include shrimp, strips of cooked ham, toasted pine nuts, croutons, or halved cherry tomatoes (using shrimp and cooked ham makes the soup non-vegetarian).
