Swabian Knauzen – bacon rolls with cheese and onions

Ingredients for 1 servings:

  • 600 g flour
  • 1 tbsp powdered sugar
  • 1 tbsp salt
  • 1 packet of dry yeast
  • 150 g bacon cubes
  • 150 g cheese cubes
  • 250 ml milk, lukewarm
  • 250 ml water, lukewarm
  • 1 onion(s)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 55 minutes

Dice the cheese and onion. Combine all ingredients in a bowl, cover, and shake well. Check to see if everything is well blended; if not, stir briefly with a spoon. Place the bowl in a warm place for 45 minutes (I use an oven preheated to 50°C (top/bottom heat). Line two baking sheets with baking paper and, using two spoons, place dollops of batter on top. Return the sheets to the oven and let the batter rest for another 30 minutes. Set the oven to 180°C (fan oven) and bake the Knauzen for 20-25 minutes. This quantity makes approximately 15 Knauzen.
