Ingredients for 3 servings:

  • 240 g wheat flour type 405
  • 4 eggs
  • 4 tbsp, levelled sugar
  • 1 pinch of salt
  • 2 cup(s) carbonated mineral water

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Mix flour, water, eggs, salt, and sugar into a smooth, runny dough. Let it rest for 20 minutes. Heat a little oil in a pan and pour in enough batter to thinly cover the bottom of the pan. Fry over moderate heat until golden brown on both sides. Roll up the pancakes, cut into thin strips, and serve as a soup garnish.
