Swedish quark cream

Ingredients for 4 servings:

  • 500 g low-fat curd cheese
  • 3 egg yolks
  • 6 tbsp sugar
  • 3 tbsp rum
  • 3 tbsp orange liqueur
  • ½ pack of orange peel flavoring
  • 6 tbsp cranberry jam
  • 6 ladyfingers
  • 3 egg whites, beaten to stiff peaks

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Beat the egg yolks and sugar until frothy. Stir in the orange zest, rum, orange liqueur, and quark. Carefully fold in the beaten egg whites. Chill the cream. Garnish with grated sponge fingers and cranberry jam before serving.
