Sweet and sour eggplant

Ingredients for 3 servings:

  • 2 eggplant(s)
  • 1 onion(s)
  • 1 tsp oil
  • 2 tbsp sugar
  • 4 tbsp balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the eggplant into 0.5 mm thin slices and the onion into rings. Heat the oil in a pan and add the eggplant and onion. Gently fry, then cover and simmer over low heat until cooked through. Add the sugar and vinegar, mix well, and continue sautéing until the sauce has reduced slightly. Season with salt and pepper. This goes well as a side dish with spicy dishes. If you don’t need to save calories, feel free to use a little more oil. Conversely, if you want to save even more calories, you can replace the sugar with sweetener.
