Sweet and sour zucchini

Ingredients for 4 servings:

  • 450 g zucchini, small, young
  • 3 tbsp olive oil
  • 1 small onion(s), finely chopped
  • 1 garlic clove(s), peeled and crushed
  • 2 tbsp vinegar (wine vinegar), white
  • 2 tbsp maple syrup, alternatively sugar

Italian side dish

Wash the zucchini, remove the ends, and cut into thin, angled slices. Heat the olive oil in a large pan. Add the onions and fry for about 5 minutes without browning. After 4 minutes, add the garlic. Add the zucchini and toss to coat evenly with the fat. Season with salt and pepper to taste. Cover and simmer over low heat for 5 minutes, until just tender. Mix the vinegar with the maple syrup or sugar and pour over the zucchini. Now increase the heat and toss the zucchini in the cooking liquid for about 1-2 minutes, until translucent and the liquid becomes syrupy. Finally, taste and adjust the seasoning if necessary.
