Ingredients for 1 servings:

  • 80 g spelt flour type 630
  • 40 g low-fat margarine
  • 20 g date(s) (soft dates), pitted
  • 20 g soy yogurt (yogurt alternative), natural, unsweetened
  • ½ tsp baking powder
  • some honey or maple syrup

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Combine flour, baking powder, soy yogurt, and margarine in a mixing bowl. Chop the dates very finely, mash them with a fork, and add them to the remaining ingredients. Knead into a soft, smooth dough. Form the dough into 5g balls and flatten them with a fork on a baking sheet. Brush with a little honey or syrup, if desired, and bake for about 10-15 minutes at 180°C (350°F) in a fan oven. Then let cool. Tip: This recipe is designed for a mini oven and yields about 30 5g cookies. Both the dough quantity and the cookie size can be increased.
