Sweet potato and apple jam

Ingredients for 4 servings:

  • 500 g sweet potatoes
  • 500 g apples
  • 2 lemons, juice
  • 250 ml water
  • 2 packets of vanilla sugar
  • 500 g gelling sugar 2:1
  • some bourbon whiskey or brandy

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 40 minutes

Cut the apples and sweet potatoes into small cubes and boil them in the water until soft. Add the lemon juice, vanilla sugar, and gelling sugar. Blend with a hand blender and mix. Add the alcohol. Boil for 3-5 minutes and pour into jars. Seal the jars and let cool. Tastes great for breakfast, but also with pancakes, crepes, and risottos.
