Sweet potato and tomato vegetables à la Gabi

Ingredients for 4 servings:

  • 4 m.-sized carrot(s), peeled, diced
  • 400 g sweet potatoes, peeled and diced
  • 1 clove(s) garlic, finely diced
  • 1 large onion(s), peeled, diced
  • 2 tbsp olive oil
  • 100 ml vegetable stock, possibly instant
  • 1 tsp oregano, dried
  • Salt and pepper, white, from the mill
  • 8 tomatoes, peeled, cut into medium-sized cubes
  • 2 medium-sized gherkins, diced
  • 1 bunch of chives, cut into fine rolls

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Heat the oil in a large pot, sauté the carrots, sweet potatoes, garlic, and onions. Pour in the vegetable stock, season with oregano, salt, and pepper, and sauté over medium heat for about 30 minutes. Add the tomatoes and gherkins, sauté briefly, adjust seasoning if desired, and serve sprinkled with chives.
