Sweet potato fries

Ingredients for 2 servings:

  • 2 sweet potatoes
  • 100 g cornstarch
  • 100 g sunflower oil or rapeseed oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

First, peel the sweet potatoes and cut them into strips that are as evenly sized as possible. These need to be soaked in water for about 30-40 minutes to extract the starch. Then, lay the potato strips out on a towel and pat dry. To bake them until really crispy, first toss the strips in a bowl with a little cornstarch and then in oil, ensuring they are completely coated. You can season them at this point, but don’t add salt until after baking, as otherwise the strips will get soggy. Arrange the fries on a baking sheet lined with greased aluminum foil, leaving plenty of space between them, and bake at 210°C (top heat) for 30 minutes. You can then add salt and seasoning.
