Ingredients for 2 servings:
- 4 sweet potatoes
- 3 tbsp olive oil
- 1 bunch chives, chopped
- 1 pinch of nutmeg
- Salt
- pepper
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Peel the potatoes and cut into 3 cm thick pieces. Season with salt and pepper, and drizzle with a little olive oil. Bake on a baking sheet in a preheated oven at 220°C for about 20 minutes. Then mash with the remaining olive oil and a little nutmeg. Just before serving, stir in the freshly chopped chives.
