Ingredients for 1 servings:

  • 200 g flour
  • 50 g sugar
  • 100 g butter, alternatively margarine
  • 1 egg white
  • 500 g pumpkin flesh, grated
  • 100 g cream, sweet
  • 100 g maple syrup
  • 4 m.-sized eggs
  • 1 egg yolk
  • 1 packet of vanilla pudding powder
  • Nutmeg, optional
  • Ginger powder, optional
  • Cinnamon powder, optional

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 10 minutes

Dough: Mix flour and sugar, add flakes of fat, and use a dough hook to crumble into small crumbs. Add the egg and knead into a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for one hour. Transfer to a springform pan, shape the edges, and bake for 10 minutes at 200°C. Filling: Simmer the pumpkin flesh with cream until soft, then let it cool. Stir in the vanilla pudding mix, maple syrup, and egg yolk. Blend everything together, pour it onto the pie crust, and bake at 200°C for about 40 minutes. If you like, you can also season the filling with a pinch of ginger powder, nutmeg, and/or cinnamon.
