Tagliatelle Padua

Ingredients for 4 servings:

  • 400 g tagliatelle
  • 100 g Parma ham
  • 100 g cooked ham
  • 80 g butter
  • 125 g cream
  • 100 g Parmesan, freshly grated
  • 1 pinch(s) nutmeg, freshly grated
  • some salt and pepper
  • 1 tbsp parsley, chopped
  • 1 tbsp chives

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the tagliatelle in salted water according to the package instructions until al dente. Drain, toss in oil if desired, and keep warm. Dice both types of ham. Heat the butter in a suitable saucepan and brown the ham cubes. Pour in the cream, stir in half of the Parmesan, and season with nutmeg. Simmer for about ten minutes until creamy. Season with salt and pepper. Fold the sauce into the tagliatelle. Serve on warmed plates and sprinkle with the remaining Parmesan, parsley, and chives.
