Tapioca Banana Pudding

Ingredients for 10 servings:

  • 2 cans of coconut milk
  • 200 g tapioca pearls, Bai Toey flavor
  • ½ cup(s) water
  • 4 drops of flavoring (Pandan / Bai Toy essence)
  • 1 banana(s) (cooking)
  • 1 cup sugar

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Soak the tapioca pearls in water for 2.5 hours. Peel the banana and cut into bite-sized pieces, then place in a pot. Drain the remaining water from the tapioca pearls, then add the soaked pearls and 1.5 cups of water to the bananas in the pot. Add the sugar to the pot, pour in the coconut milk, and add the Bai Toey essence. Simmer for about 1.5 hour while stirring. The tapioca pearls should be clear, then they are ready. Serve hot or cold. If you don’t like bananas, you can leave them out or use other fruit. Bai Toey essence (also called pandan) and Bai Toey tapioca pearls are available in Asian stores. Tapioca is also known as sago.
