Ingredients for 1 servings:
- 200 g roe
- 2 onions
- 2 lemons, juice
- 200 ml oil, good
- 650 g white bread, stale

Cut the bread into slices, soak in water, then squeeze out excess water and crumble. Puree the onion in a blender (don’t forget to peel it first). Combine all ingredients, including the breadcrumbs, in a tall bowl and mix vigorously and thoroughly with a hand mixer or, more traditionally, with a sturdy, large wooden spoon until smooth. If you want the roe to lose its structure and make the mixture finer, you can also do this with a hand blender. Regarding the quantities: You can reduce or halve the amount of roe, onion, and lemon juice. This depends on how intensely you want the roe and onion to taste, or how acidic you like it. These are guidelines only. Just try it! It’s important to remember that this is a delicate food that has been prepared without added preservatives. Likewise, don’t neglect the scales too much; it’s very rich. Tarama makes a delicious spread or dip.
