Ingredients for 4 servings:
- 50 g fish roe (taramo)
- 1 roll, hard
- 1 small onion(s)
- ½ bottle of olive oil, at least
- 1 dash of lemon juice

Taramo is fish roe and resembles a pinkish paste when bought. You can buy taramo in any Greek or Turkish grocery store. Soak the hard bread roll in water. Squeeze out the water well and put it in a tall container. Finely dice the onion and add it. Now add the taramo. Then add a generous squeeze of lemon juice and plenty of olive oil. Mix everything with a mixer on high for about 5-10 minutes until the original consistency has roughly doubled. Now just season to taste. If it’s too acidic, add more olive oil. If it’s too salty, add more lemon juice. It’s always worth making if a dish goes well with tzatziki, and if you use good ingredients, it’s also easy to digest, as you’ll feel full very quickly.
