Potato snack as a starter or side dish

Slice/grate the potatoes into 3 mm thick slices. Place the slices, not overlapping, on a baking sheet lined with parchment paper. Brush the potato slices thinly with olive oil and lightly season with salt and pepper. Bake in a preheated oven at 200 degrees Celsius for about 20 minutes. Then push half of the potato slices together, arrange the finely chopped bacon on top, sprinkle with grated cheese, and place the other half of the roasted potato slices on top. Return the potatoes to the oven and bake for about 10 minutes. To serve, add a few dollops of sour cream and sprinkle with chopped spring onion.
