Tea Mousse from Lister Heidetal Tea …

The perfect tea mousse from lister heidetal tea … recipe with a picture and simple step-by-step instructions.

  • 100 Milliliters Water
  • 1 tablespoon “Lister Heidetal” – Tee
  • Or your favOrite type of tea 😉
  • 2 leaf Gelatin white
  • 1 Egg yolk
  • 2 Leveled tablespoon Sugar
  • 1 Protein
  • 1 pinch Salt
  • 100 g Whipped cream
  • 1 packet Cream stiffener
  • 1 packet Vanilla sugar
  • Fresh raspberries
  • Lemon balm fresh
  1. Pour boiling water over the tea. Cover and let stand for about 6 minutes. Pour through a sieve and let cool.
  2. Soak gelatine in cold water.
  3. Stir egg yolks with sugar over a water bath that is not too hot until light creamy. Gradually, while stirring, pour in the tea. Take the bowl off the water bath. Squeeze out the gelatine well and dissolve it in the hot mixture. Stir the mixture cold.
  4. Beat the egg whites with salt until stiff. Fold in the egg whites.
  5. Whip the cream with the cream stabilizer and vanilla sugar until stiff and fold in as well.
  6. Cover the bowl with cling film and refrigerate for about 3 to 4 hours (or overnight).
  7. Use a damp spoon to prick the mousse and spread on dessert plates. Garnish with raspberries and lemon balm.
