Teichmann’s Leek Salad with Homemade Mayonnaise

  • 1 Leek
  • 1 Apple
  • 1 Can Corn
  • 3 Discs Boiled ham
  • 1 Egg
  • 1 tsp Mustard medium hot
  • 0,5 tsp Salt
  • 0,5 tsp Sugar
  • 0,5 tsp Freshly squeezed lemon juice
  • 1 bottle Rapeseed oil
  1. Drain the corn. Cut the leek lengthways, rinse thoroughly under running cold water and cut into fine rings. Peel the apple, cut in half, quarter, remove the core and cut the apple quarters into pieces. Dice the cooked ham.
  1. Mix the egg, mustard, salt, sugar and lemon juice in a blender on the highest setting until everything has combined; a small hole forms in the middle. Pour enough oil into this with the mixer running until this small hole has closed.
  1. Mix the prepared ingredients in a bowl and carefully stir in the mayonnaise.
