The best low-carb pancakes

Ingredients for 2 servings:

  • 50 g protein powder
  • 20 g psyllium husks
  • 4 eggs
  • 500 ml milk

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Mix everything together and stir with a whisk. Keep adding milk until a thick mixture forms. The psyllium husks will expand, so it’s best to let the mixture stand for 5 minutes and then add another sip of milk. I use a small pan to fry them. This way the pancakes are the right size for easy flipping. They rise a little in the pan but then collapse into normal pancakes on the plate. I tried many recipes before I came up with my own. And I love it! I eat it with skyr (with sweetener) or low-calorie jam. Enjoy!
