Ingredients for 2 servings:
- 2 chicken breast fillets or turkey schnitzel
- salt and pepper
- 1 ball of mozzarella
- some basil leaves

Chicken breast rolls filled with mozzarella and basil
First, wash the chicken breast fillet and cut into 1-1.5 cm thick slices. Then, season both sides generously with pepper and salt, and top one end with sliced mozzarella. One large slice is enough per schnitzel. Make sure to leave a little space around the edges so the cheese doesn’t run out immediately when cooking. Then, place 2-3 fresh basil leaves on top (more or less to taste). Roll the filled schnitzels into small rolls and secure them with toothpicks or small skewers. This can be quite tricky, especially with chicken breast fillet and small slices. Turkey schnitzels are easier. Sear the prepared rolls gently and then place them in a small baking dish at 180°C for about 10-15 minutes (depending on thickness and oven type) to ensure they cook thoroughly on the inside. If you have some leftover mozzarella (or you simply prefer a cheesier texture), you can sprinkle the rolls with diced pieces before baking. A little juice will be released during baking, which should definitely be poured over the rolls when serving—it tastes delicious. Serve with fresh baguette and a green salad. It’s a very simple but wonderful recipe.
