Ingredients for 1 servings:

  • 1 ½ liters of raspberry, blackberry, or currant juice, fresh or frozen
  • 2 pkt. gelling sugar, 2:1
  • 1 vanilla pod(s), pulp
  • little water

If necessary, strain the juice through a fine sieve to catch even the tiniest grains. Pour 1.5 liters of cold juice into a tall saucepan. Sprinkle 2 packets of 2:1 gelling sugar into the cold fruit juice and mix in the vanilla seeds. Let the juice stand for about 30 minutes to allow the sugar to swell. Bring to a rolling boil for at least 7 minutes, stirring constantly, and then pour into clean, rinsed screw-top jars. Immediately close the lids and place upside down on a kitchen towel to create a vacuum. After a few minutes, the jars can be turned upside down again. To ensure clean pouring, I use a jam funnel! This amount of juice makes about 8 jars of 200 ml each.
