Thyme potatoes with red onions

Ingredients for 4 servings:

  • 1 kg waxy potatoes, peeled, diced
  • 150 g butter
  • 2 m.-large onion(s), red, quartered
  • 2 cloves garlic, diced
  • 1 tsp lemon juice
  • 2 tbsp thyme, fresh, chopped
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Side dish to grilled meat, poultry or fish

Cook the potatoes in boiling water for 10 minutes, drain well, and set aside. Melt the butter in a large pan. Add the onion, garlic, and lemon juice and sauté for 2-3 minutes, stirring constantly. Add the potatoes to the pan and toss well in the butter. Reduce the heat, cover the pan, and simmer gently for 25-30 minutes, until the potatoes are golden brown and cooked through. Turn them over occasionally to prevent them from burning and sticking to the bottom of the pan. Sprinkle with thyme and season with salt and pepper. Delicious with grilled meat, poultry, or fish.
