Ingredients for 4 servings:
- 1 kg kid meat
- 2 cloves garlic
- 2 sprigs rosemary, chopped
- 4 tbsp olive oil
- 200 g vegetables (roasted vegetables), diced carrots, celery, leeks, onions
- 1 sprig(s) rosemary, whole
- 2 dl white wine
- salt and pepper
- Paprika powder
Instructions
Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes
Peel and halve the garlic, remove the green cores, and finely chop the garlic. Mix with rosemary, salt, pepper, paprika, and olive oil to form a paste. Rub the mixture into the meat and let it rest for two hours. Preheat the oven to 180°C. Roast the kid in a suitable roasting dish for about one hour until golden brown. Add the roasted vegetables and rosemary sprigs and roast for another 30 minutes. Pour in the white wine and roast for another 30 minutes, basting constantly with the wine juices. Remove from the oven and let it rest briefly. Then carve and serve.
