Ingredients for 2 servings:

  • 1 chicken
  • 4 cloves garlic
  • 2 onions
  • 4 tbsp olive oil
  • 2 sprigs rosemary
  • 4 sprigs of thyme
  • ¼ liter white wine, dry
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 35 minutes

Chicken in wine with herbs from the oven

Cut the chicken into 4-6 pieces, wash, and place in a shallow baking dish. Brush the pieces on all sides with olive oil, season generously with salt and pepper. Peel the garlic and halve the cloves. Peel and quarter the onions. Arrange the onions and garlic around the chicken pieces along with the herbs. Pour in the wine. Roast the chicken in the oven at 200°C (top/bottom heat) for 1 hour and 15 minutes. Baste occasionally with the juices and add more wine, if desired. Garlic potatoes and a dry white wine (e.g., Riesling) go well with this dish. Tip: If you don’t have fresh herbs, you can also use dried ones (e.g., Herbes de Provence). As a variation, you can also use red wine or add various vegetables.
