Tim's Barbecue Sauce with Jack Daniels

Ingredients for 4 servings:

  • 100 g onion(s)
  • 1 garlic clove(s)
  • 4 tbsp olive oil
  • ½ cinnamon stick(s)
  • 1 tsp all-spice
  • 1 tbsp mustard seeds
  • 1 tbsp thyme, dried
  • 1 tbsp smoked paprika powder
  • 1 tbsp Rub (Tims Kitchen Classic BBQ Rub) from the database
  • 1 tbsp honey
  • 1 tbsp Balsamic vinegar, dark
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 200 ml cola
  • 200 ml ketchup
  • 4 cl whiskey (Jack Daniels)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Finely dice the onions and garlic and sauté in a saucepan over medium heat in olive oil until translucent. Crush the cinnamon bark and allspice berries with a generous pinch of coarse sea salt in a mortar and pestle and add to the pan for 2 minutes. Deglaze everything with the cola and cook uncovered until the liquid has reduced by half to a third. Then add the remaining ingredients to the pan and simmer for another 15 minutes with the lid on. Tip: This sauce is also great to make in larger batches. I portion it out and freeze it; it works really well.
