Tiramisu without eggs and alcohol

Ingredients for 6 servings:

  • 120 g powdered sugar
  • 3 packets of vanilla sugar
  • 500 g mascarpone
  • 300 g quark, 20% fat
  • 300 ml whipped cream
  • 3 packs of cream stiffener
  • 2 pts. ladyfingers
  • 300 ml coffee, strong
  • 1 pack of cocoa powder

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

First, brew the strong coffee and let it cool in a bowl, then set it aside. Fill a pot with water and place it on the stove. Place a pan over the water in a hot water bath. Add the powdered sugar, vanilla sugar, and a splash of water to the bowl until combined (it’s okay if you add too much water). Mix with a hand mixer. Remove from the water bath and fold in the mascarpone until well combined. Fold in the quark. Whip the cream with the cream stabilizer until stiff peaks form. Fold in again. You should now have a creamy mixture. Dip the ladyfingers in the strong coffee and place them in a dish as the very first layer. Spread half of the mascarpone cream over the top. Soak the remaining ladyfingers and place them on top. Spread the remaining cream on top. Let rest in the refrigerator overnight. Sprinkle with cocoa powder to serve. Tip: Don’t skimp on the coffee, it will make the tiramisu even juicier.
