Tofu and tomato spread

Ingredients for 1 servings:

  • 200 g tofu, alternatively smoked tofu
  • 1 m.-sized tomato(s)
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 3 tbsp olive oil
  • 3 tbsp tomato paste
  • 1 tbsp white wine vinegar
  • salt and pepper
  • basil

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

Finely chop the onion and garlic and sauté in a tablespoon of olive oil over medium heat until translucent. Wash the tomato, remove the stem and core, and chop finely. Cut the tofu into small cubes and add everything to the pan with the onion and garlic and fry for a further 3 minutes. Then add the tomato paste and fry for another 3 minutes, stirring constantly. Remove from the heat and let cool. Transfer the cooled mixture to a tall mixing bowl, add 2 tablespoons of olive oil and the vinegar, and puree with a hand blender. Season with pepper and salt, and scatter the basil on top as a garnish. Tip: Unfortunately, the paste is not suitable for freezing, as it will otherwise become very watery.
