Ingredients for 4 servings:
- 400 g natural tofu, soft but not silken tofu
- 1 jar applesauce, unsweetened, approx. 360 g, (apple puree)
- 2 m.-large banana(s), ripe
- ½ tsp vanilla, real, ground
- 2 tbsp lemon juice, preferably freshly squeezed
- 1 small banana(s), ripe, sliced
- e.g. soy milk (soy drink) or soy cream
- e.g. agave syrup or white stevia powder

Puree the banana with the lemon juice and vanilla. Add the apple puree and puree briefly again. Finally, add the diced tofu and puree everything until a smooth cream forms. Divide the tofu and fruit cream between 4 serving bowls and garnish with the banana slices. Note: If you prefer a thinner cream, you can stir in a little more soy milk or soy cream. If you like it sweet, you can sweeten the cream to taste. However, I don’t add any extra sweetness to the cream, as I find the natural sweetness of the fruit is perfectly sufficient. The tofu and fruit cream is suitable as a dessert (4 servings), a protein-rich breakfast, or a snack. Then, depending on how hungry you are, divide the cream into just 2 servings.
