Tomato and mozzarella bread casserole

Ingredients for 1 servings:

  • 1 large tomato(s)
  • ½ pack of mozzarella or some mini mozzarella
  • 1 slice(s) of bread (white bread or low-carb bread)
  • some olive oil
  • some basil leaves
  • n. B. Salt

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Preheat the oven to approximately 200°C (fan/convection oven). Brush a small dish (e.g., a porcelain bowl) with a little olive oil. Toast the bread (I used white spelt bread) until very crispy. Dice the tomato. Dice the mozzarella or halve the mini balls. Dice the toasted bread. Mix half each of the tomatoes, mozzarella, and bread in the dish. Place some basil on top, then add the other half of the tomatoes, mozzarella, and bread mixture. Bake in the oven for approximately 8-10 minutes. Remove from the oven and drizzle with a little olive oil. If you like, you can add a little salt (I didn’t). Decorate with basil leaves and serve.
