Tomato and watermelon salad

Ingredients for 4 servings:

  • 8 tomatoes
  • ¼ watermelon(s)
  • 3 sprigs of peppermint
  • 3 sprigs of lemon thyme
  • Balsamic vinegar
  • oil
  • salt and pepper

Instructions

Place the tomatoes in boiling water for a few seconds. Cool, peel, cut into small pieces, and remove the seeds if desired. Peel the watermelon from its rind, chop into small pieces, and remove the seeds if desired. Place the tomato and watermelon pieces in a bowl. Remove the lemon thyme and peppermint leaves from the stems and scatter over the top. Mix the balsamic vinegar and oil to make a dressing, season with salt and pepper, add to the bowl, stir everything together, and serve the salad chilled. Serve with baguette.
