Ingredients for 4 servings:
- 250 g white bread, e.g. Italian country bread or similar.
- 250 g tomatoes
- 2 spring onions
- 2 tbsp parsley, finely chopped
- 6 tbsp olive oil
- ½ lemon(s), squeezed
- salt and pepper
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 45 minutes
Whisk together lemon juice, 5 tablespoons of olive oil, salt, pepper, and parsley. Add diced tomatoes and finely sliced spring onions to the sauce and mix well. Let it simmer for about half an hour. Cut the bread into large cubes and fry in a pan with 1 tablespoon of olive oil until crispy. Add the lukewarm bread cubes to the salad and mix. Eat immediately, or the bread cubes will become mushy.
