Tomato bread salad with spring onions

Ingredients for 4 servings:

  • 250 g white bread, e.g. Italian country bread or similar.
  • 250 g tomatoes
  • 2 spring onions
  • 2 tbsp parsley, finely chopped
  • 6 tbsp olive oil
  • ½ lemon(s), squeezed
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 45 minutes

Whisk together lemon juice, 5 tablespoons of olive oil, salt, pepper, and parsley. Add diced tomatoes and finely sliced ​​spring onions to the sauce and mix well. Let it simmer for about half an hour. Cut the bread into large cubes and fry in a pan with 1 tablespoon of olive oil until crispy. Add the lukewarm bread cubes to the salad and mix. Eat immediately, or the bread cubes will become mushy.
