Tomato bread salad

Ingredients for 2 servings:

  • 250g ciabatta
  • 300 g tomatoes (small, e.g. cherry tomatoes)
  • 100 g arugula
  • 4 slices of goat cheese
  • 60 g walnuts
  • 1 sprig(s) rosemary
  • 2 cloves garlic
  • 5 tsp honey
  • olive oil
  • Balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with goat cheese

Chop the garlic and walnuts, dice the bread, and fry everything in a pan with olive oil (fry the bread first, then add the nuts and garlic). Wash and halve the tomatoes, roughly chop the arugula, and place everything in a large bowl. For the dressing, whisk together the vinegar, 5 tablespoons of olive oil, salt, pepper, and 1 teaspoon of honey. Add the rosemary and 4 teaspoons of honey to a pan and brown the goat cheese on both sides. Serve the salad with the bread and dressing, top with two slices of goat cheese, and serve.
