Tomato Cinnamon Cake

Ingredients for 1 servings:

  • 3 eggs
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 20 tbsp sugar
  • 20 tbsp flour
  • 20 tbsp oil (rapeseed or sunflower oil)
  • 500 g tomatoes, pureed
  • 1 tbsp cinnamon
  • possibly grease for the tray

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

sounds unusual, but tastes really great

Preheat the oven to 200°C. Beat the eggs for about 2 minutes until frothy, then add all the other ingredients and mix. Finally, stir in the cinnamon. Pour the batter onto a greased or parchment-lined baking sheet. Bake the cake on the middle rack of the oven at 200°C for about 15 minutes. Test for doneness with a wooden skewer.
