Tomato-olive-garlic paste

Ingredients for 1 servings:

  • 1 jar of tomatoes, dried in oil, approx. 280 g drained weight
  • 1 small jar of green olives
  • 1 pack of feta cheese (optional), approx. 250 g
  • 3 cloves garlic
  • 1 pepper, pickled or fresh, optional
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

as a spread or filling – quick & easy

Chop tomatoes (without oil), olives, garlic, and feta, add a pinch of pepper, then blend with a hand blender until a paste forms – done. Don’t add salt; the ingredients are already salty enough. Note on garlic: 3 cloves, especially if they’re large, fresh, and spicy, are quite generous. I like it that way, but it’s a matter of taste; two cloves will do, too. It’s great as a spread, although the target amount is quite large, but it’s also suitable for filling things, such as zucchini.
