Tomato-Parmesan-Basil Spread

Ingredients for 8 servings:

  • 125 g Grana Padano, Parmigiano Reggiano or Parmesan
  • 300 g cream cheese, natural
  • 200 g cream cheese, grainy
  • 2 tomatoes
  • 1 handful of fresh basil
  • 2 cloves garlic
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Make a cross-shaped incision in the tomatoes opposite the stem and blanch them in boiling water. Then place the tomatoes in cold water. You can now easily remove the skin from the tomatoes using a paring knife. Quarter the tomatoes and remove the seeds and liquid from the inside. Finely dice the tomato segments with a knife. Finely chop the Parmesan cheese with a food processor. Crush the garlic cloves. Remove the stems from the basil and finely chop with a knife. Mix all the ingredients in a bowl with the cottage cheese and cream cheese and season with salt, pepper and a squeeze of lemon. Let the spread sit for at least an hour. It is particularly delicious on warmed flatbread or baguette.
