Tomato Salad 1-2-3

Ingredients for 2 servings:

  • 4 m.-sized tomatoes
  • ½ m.-sized onion(s)
  • 1 tbsp balsamic vinegar, dark
  • 2 tbsp olive oil, good
  • 3 tbsp mineral water, still water, or tap water
  • e.g. Herbs of Provence or other green herbs
  • salt and pepper

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

vegetarian and easy to prepare

In a bowl, mix the balsamic vinegar, olive oil, and water (in a ratio of 1:2:3—hence the name). Finely dice the peeled onion, cut the tomatoes into approximately 1/2 cm thick slices, then halve them again. Add everything to the marinade, which should have a slightly acidic flavor from the balsamic vinegar. Season the salad well with salt and pepper and sprinkle with the herbs of your choice (you can be generous here). Let it marinate for a little longer (about 5-10 minutes), then serve.
