Tomato salad with passion fruit dressing

Ingredients for 2 servings:

  • 500 g tomatoes
  • 4 passion fruit(s)
  • 1 pepper, red
  • 1 onion(s), red
  • ½ bunch parsley
  • 5 tbsp olive oil
  • some salt and pepper
  • some sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the passion fruit, scoop out the pulp with a spoon, and place it in a bowl. Wash, slice, deseed, and finely chop the peppers. Wash the parsley, spin dry, and finely chop. Mix everything with the olive oil to make a dressing and season with salt, pepper, and sugar. Peel the onion and slice into thin strips. Wash the tomatoes, remove the stems, and roughly chop them. Mix the onions and tomatoes in a bowl and pour the dressing over them.
