Tomato sauce, simple and delicious

Ingredients for 2 servings:

  • 4 tomatoes, fresh, from the market
  • 1 shallot(s)
  • 1 half zucchini
  • 1 chili pepper(s)
  • 1 garlic clove(s)
  • 250 ml vegetable stock
  • 1 pinch of cinnamon
  • 1 tsp, heaped sage
  • some salt and pepper
  • 1 tsp sautéed oregano
  • some olive oil
  • some chili
  • 1 tbsp, heaped mascarpone
  • 1 shot of red wine
  • some Parmesan, sliced

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Wash the tomatoes and zucchini and cut into pieces. Deseed the tomatoes. Chop the shallot and chili pepper. Add a little olive oil to a non-stick pan and sauté the zucchini. After 2 minutes, add the onion, chopped garlic, and chili pepper and continue sautéing. After 5 minutes, deglaze with vegetable stock and add the mascarpone. Add the tomato pieces and simmer for 10 minutes. Add more liquid (water and stock) if needed. Add the spices, herbs, and a splash of red wine to the sauce and simmer for another 10 minutes. Serve on a plate and sprinkle with shaved Parmesan cheese.
