Tomato sauce with apple and honey

Ingredients for 6 servings:

  • 1 gr. can/n tomatoes, chunky or fresh tomatoes, aromatic, fully ripe
  • 1 apple, not too sour, grated
  • 1 onion(s), finely diced
  • 2 cloves garlic, finely diced
  • 3 tomatoes, dried, diced
  • 2 tbsp tomato paste
  • 1 piece(s) ginger, thumb-sized, freshly grated
  • 2 tbsp honey
  • 2 tsp oregano
  • 1 tsp smoked paprika powder, hot
  • 1 tsp smoked paprika powder, mild, (Allspiceón de La Vera)
  • 1 shot of white wine
  • 4 tbsp olive oil
  • some sugar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

In a pan, sauté the onion and garlic in olive oil until translucent. Then add the tomato paste, paprika, and apple, and let the apple caramelize slightly. The tomato paste will lose its acidity and the paprika will intensify its flavor. Deglaze with a splash of white wine and let it reduce. Stir well to prevent the apple from overcooking and the paprika from burning. Now add the tomatoes (including the dried ones), ginger, oregano, honey, and salt, and simmer for about 30 minutes. Season to taste with a little sugar and freshly ground pepper.
