Ingredients for 1 servings:

  • 1 onion(s)
  • 3 tbsp olive oil
  • 500 g tomatoes, pureed
  • 4 m.-sized eggs
  • salt and pepper
  • e.g. parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Tomato spread according to grandpa’s recipe

Dice the onion and add it to a hot pan with olive oil. Once the onions are translucent, add the passata. When the mixture is simmering, add the four eggs. Mix everything thoroughly and stir until the mixture thickens slightly. Remove the pan from the heat and season with salt and pepper. I like to add a little parsley. Transfer the spread to a bowl and store in the refrigerator.
