Ingredients for 4 servings:
- 500 g tortellini (refrigerated counter)
- 200 g cooked ham, diced
- 1 tbsp butter
- 600 ml cream
- 2 egg yolks
- 4 tbsp Parmesan, freshly grated
- 1 tsp nutmeg
- 1 tsp salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Ham and cream sauce like the Italians
Cook the tortellini according to the package instructions. Briefly brown the cooked ham in butter in a deep pan, then add 400ml of the cream and simmer on low heat. When the tortellini are cooked, add them to the pan with the ham cream and continue simmering. Meanwhile, in a small bowl, whisk the egg yolk with the Parmesan cheese, nutmeg, salt, and the remaining 200ml of cream. Add this to the pan with the tortellini and simmer until the sauce thickens. Serve the tortellini immediately. Very rich, but the flavor is fantastic. Every now and then, you can treat yourself to something like this.
