Tortellini salad with Parmesan and olives

Ingredients for 6 servings:

  • 500g tortellini
  • 6 tomatoes
  • 4 tbsp white wine vinegar or white balsamic vinegar
  • 6 tbsp olive oil
  • 2 tsp oregano
  • 2 tsp thyme
  • 150 g black olives, pitted
  • 80 g Parmesan
  • 4 garlic cloves
  • basil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Quick, easy and super delicious salad for all occasions

Cook the tortellini according to the package instructions and let cool. Cut the tomatoes into chunks and finely chop the garlic. Add to the tortellini along with the grated Parmesan, thyme, oregano, and olives and toss with oil and vinegar. Garnish with basil leaves and, if desired, a little more Parmesan, and serve.
