Tortellini – Spätzle – pan with wild garlic pesto

Ingredients for 2 servings:

  • 250 g tortellini, Italian colorful
  • 500 g spaetzle (wild garlic spaetzle)
  • 200 g ham (diced Black Forest cheese)
  • 1 large onion(s)
  • 2 cloves garlic, Chinese
  • 2 tbsp pesto (wild garlic pesto)
  • Salt
  • Oil (rapeseed oil)
  • Water

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the tortellini and wild garlic spaetzle separately, each in a separate pot, in salted water and drain through a colander. Meanwhile, chop the onion and garlic and lightly sauté in oil. Then add the diced Black Forest ham and lightly toast it. Now, fold both pasta types into the ham mixture and mix with 2-3 tablespoons of wild garlic pesto. Butter isn’t necessary for the wild garlic spaetzle, as there’s enough oil from the wild garlic pesto. Toss everything together once more, then divide among the plates, and the dish is ready.
