Tortellini with ham, cream, mushrooms and parmesan sauce

Ingredients for 2 servings:

  • 1 pack of tortellini
  • 1 shallot(s)
  • 1 garlic clove(s)
  • 75 g ham, finely diced
  • 1 small can of mushrooms, whole heads or fresh
  • 1 cup of cream
  • 3 tbsp herb cheese spread
  • 2 tsp, heaped basil, frozen or dried
  • 2 tbsp olive oil
  • salt and pepper
  • chili flakes
  • 100 g Parmesan or Grana Padano, grated

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

quick and tasty

Cook the tortellini in plenty of salted water according to the package instructions. Peel and finely dice the shallot and garlic clove. Drain the mushrooms. Clean any dirt from fresh mushrooms with a soft brush and quarter any larger ones. Heat the olive oil in a deep pan. Sauté the shallot and garlic. Add the diced ham and fry for 2-3 minutes, being careful not to burn. Pour in the cream. Add the mushrooms and cook for about 8-10 minutes over medium heat, stirring occasionally. Mix in the cream cheese and let it melt. Add the basil, chili flakes, and a pinch of pepper, and season with salt if desired. Stir the Parmesan cheese into the hot sauce until it melts. Do not cook; just let it stand for a while. Drain the tortellini and toss with the sauce.
