Tortillas with spicy pepper filling

Ingredients for 4 servings:

  • 8 tortillas
  • 3 bell peppers, colored
  • 160 g onion(s)
  • 400 ml tomato juice
  • 1 tsp, heaped sugar, brown
  • 1 clove(s) garlic
  • 2 tbsp Balsamic vinegar bianco
  • 1 ½ tbsp olive oil
  • salt and pepper
  • Spice(s), hot of your choice

Instructions

Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours

vegetarian – simple

Finely dice the onion and fry it in hot olive oil with the finely diced garlic until translucent. Caramelize it with brown sugar and deglaze with balsamic vinegar. Dice the bell peppers, add them, and toss to combine. Add the tomato juice and season with salt, pepper, and hot spices. Reduce to medium heat for about 30 minutes, stirring frequently. Dust the tortillas with water and heat in a preheated oven at 200°C (fan oven) for about 1 minute. Then fill with the vegetables and roll them up.
