Ingredients for 2 servings:
- 4 slices of bread
- 1 can of tuna
- 2 tbsp corn kernels, from the can
- ½ red bell pepper(s)
- 1 spring onion(s)
- 1 dashes lemon juice
- 2 slice(s) cheese (Emmental), thick slices
- 2 tbsp mayonnaise
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes
Super fast
Toast the bread slices and, in the meantime, drain the tuna and corn. Then shred the tuna with a fork. Wash the bell pepper and spring onion and finely dice or slice into thin rings. Mix the tuna, corn, bell pepper, spring onion, and mayonnaise. Season with a little lemon juice. Spread the tuna mixture on 2 slices of bread. Place a slice of Emmental cheese on each slice and bake under the grill, in the oven, or in the microwave until the cheese has melted. Place the other 2 slices of bread on top and slice the whole thing diagonally once. Also works great with toast or a roll. Best served hot. The sandwich can also be quartered and served at a party as finger food with a toothpick in it.
