Tuna and sweet potato salad

Ingredients for 1 servings:

  • 2 cans of tuna in water
  • 3 large sweet potatoes
  • 1 piece(s) ginger
  • 1 m.-sized onion(s)
  • 1 pinch(s) cinnamon powder
  • 1 pinch(s) of cayenne pepper
  • 1 pinch(s) sweet paprika powder
  • 1 bunch of parsley
  • 2 tbsp olive oil
  • 1 large lemon(s), the juice
  • 1 pinch(s) of pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Dice the onion and sauté in olive oil. Peel the sweet potatoes, cut them into small pieces, and add them to the pan. Cover everything with water and add the spices and finely chopped ginger. Let it cook for 10-15 minutes. Remove from heat and let cool. Add the tuna. Mix lemon juice and olive oil with pepper to make a dressing and pour over the mixture. Serve garnished with parsley. This salad is paleo-friendly and provides a good supply of energy, essential fats, and protein. Real powerlifter food.
