Ingredients for 4 servings:

  • 400 g turkey breast
  • 2 onions
  • 2 garlic cloves
  • 2 spring onions
  • 2 carrots
  • 300 g broccoli, frozen
  • 1 tbsp chili pepper(s) (jalapenos), pickled, finely chopped
  • 150 ml vegetable stock
  • 2 tbsp crème fraîche
  • Mustard
  • salt and pepper
  • Paprika powder
  • chili powder
  • 2 tbsp oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the turkey breast into thin strips, sear in 2 tablespoons of oil, then remove from the pan. Slice the onions, slice the spring onions, garlic, and carrots. Stir-fry in the oil, then add the meat back in. Pour in the broth, simmer gently, and season with salt, pepper, mustard, paprika, and chili powder. Add the broccoli and simmer briefly. Taste; it should still have some bite! Add the jalapenos and top with crème fraîche, which will also reduce the heat somewhat. Serve with tagliatelle or rice.
